Roasted Mixed Vegetables

Ingredients:


Assorted vegetables (e.g., carrots, bell peppers, broccoli, cauliflower, sweet potatoes)

Olive oil

Salt and pepper

Herbs (rosemary, thyme, or your choice)

Instructions:


Preheat your oven to 425°F (220°C).

Wash and chop the vegetables into bite-sized pieces.

Place the vegetables on a baking sheet.

Drizzle with olive oil, sprinkle with salt, pepper, and herbs. Toss to coat evenly.

Roast in the oven for 20-25 minutes or until the vegetables are tender and slightly browned.

Enjoy these flavorful roasted vegetables as a healthy side dish for your holiday meal!
